I read somewhere that fish can eat vegetables. is this true because I would like to give them more of a variety of food to eat.

yes it is. I feed my fish lettuce
(really clean romaine) every now and then. What they dont eat, I take out. I have cichlids and red tailed sharks that seem to like it. Make sure it is in small peices.

well, most fish can, some can't.
NOTE:

my jack dempseys, crayfish, snails, and plecostumus all eat frozen peas with gusto. Can a snail eat with gusto? Peas are also easy for bottom dwellers because they sink. A piece of green, leafy lettuce like romaine held on the bottom by a rock will be nibbled on by many species and can be left in the tank for several days without fouling the water. This is especially helpful in a non-planted tank as some species are plant-nibblers.

Some species are herbivorus(plant-eating), carnivorus(meat-eating), or omnivorus(meat and plant-eating). One of the joys of fishkeeping is trying different foods and discovering what they will/won't eat. I don't think any vegatables could hurt your fish but I just found out that onions can seriously harm dogs, so ya never know.

I wouldn't recommend the feeding of peas too often. They are an aquatic diuretic. Sort of like.. fish ex-lax.
