Starting out my 2nd ever serious tank, a five and a half gallon because I'm not allowed much more in my dorm. I've had everyone in and everything set up for 2 full days now. The mix of fishies seems to be going well - I have 1 red platy, a goldfish, 5 zebra danios, and 1 dalmation molly. None of these fellows are more than 2 1/2 inches long, the biggest being my molly (named Lancelot) who is hovering around 2 inches. The only sad thing is, my little Lancelot is not eating. He appears to browse the surface, but when he managed to get food in his mouth he just spits it out. I've been using floating variety pellets (they are intended for goldfish, but I had them, so thought I'd give it a shot), and all my other fish are eating it and loving it. I'm a bit afraid to experiment with other food varieties, becuase I don't want to upset the teneous balance between them that I've managed to find. Am I unnecisarily freaking out, since it hasn't been THAT long? How long can a fish go without food? Any suggestions?

Yes, your moderately freaking. Lancelot just doesn't like the taste of the goldfish pellets. Try switching to a tropical fish staple flake food like Tetramin and supplement with the Goldfish pellets.
