How fast can these magnificent fish grow in a month in a 55 gallon tank. And what about the growth rate of a pacu?

Both fishes mentioned will grow faster if you perform frequent water changes with a siphon and feed high quality frozen food. The fishes would probably be getting close to 10 inches in length after a year. ( not full size)

mine has grown to 6inches in a year and hes starting to slow down now.

Oscars grow about 1" - 1 1/2" per month up until they reach 6" or 7"; then they slow down considerably. By 1 year they should be about 8", 2 years they should be about 11" - 12", and by 3 years they should be full grown at around 14" or larger. (BTW, this is all standard length, ie not including the tail)

I'm not sure of the exact growth rate of pacus, but I do know they grow incredibly fast and get incredibly big. Unless you have AT LEAST a 500 gallon tank, I don't suggest keeping/buying a pacu.
