I keep reading articles and things that tell you to introduce new foods slowly. Does that mean you're supposed to feed only one type/flavor of food at a time, or does it strictly mean that you should gradually feed your cat a new food? I feed my almost-4 month old kitten a different flavor of canned food for each meal and have been doing so since he was 7 weeks old. (e.g. Chicken and Liver for morning, Ocean Whitefish for lunch, and Chicken and Rice for dinner w/ dry food always avaliable in a bowl nearby)

In my experiance you should be alright once you have your kitten off special kitten food and then onto adult food. I change brands and flavours pretty much every day. My kitties get bored with the same stuff day in day out. They have wet and dry food mixed together twice a day. I also give them raw meat once or twice a week and always make sure they have plenty of water.
If you are feeding kitten food currently then I would suggest you start with a half and half mixture of kitten food and adult food and gradually leave the kitten food out altogether. If your kitty gets the runs do not go back to kitten food but give white fish or chicken/turkey mixed with white rice to firm up the bowel movements and then try again.
Remember cats are like us, you would get bored if someone fed you sausages for 12 weeks running and so do cats!

I always do a gradual switch when changing dry foods but I've used a variety of canned foods from day to day without any problems. It seems that cats can get used to variety and have less/no problems with food switches.
As long as your kitten is not getting digestive upsets by switching flavors I dont think you have anything to worry about.
