I would definatly look into draft or draft crosses, like a Clysdale (sp???) or a Fjord, i know that Fjords can carry alot of weight, so you won't have a problem there, but they are a bit short.

Run in shed, mainly because it's cheaper than a barn, with less up keep and it's really all you need, unless your horse is a show horse.
