The best method of training is to have his wings clipped this does not hurt the bird and the feathers will grown back in with the next molt, This helps the bird calm down as he needs to rely on you to get him around.
They can still fly but can not get the height for the first couple of times he attempts to fly he will crash to the floor this is fine aslong as there is nothing on the floor that can hurt him like hard floors, A carpeted room is better.
Keep Putting your hand in tha cage and holding it there until the bird setles then move your hand closer. If he will come to your hand and sit on it with food simply allow him to sit on your hand and slowly move your hand out of the cage, Talk to him softly and calmly at all times, Eventually he will trust you and will stay on your hand.

Most birds bite just to taste you but this is more like a nibble not a bite..
In the wild the only defence a bird has is its beak and so will bite if it feels threatened.
But your making progress because he is coming out of the cage and will go on your hand.
