To answer your question, yes, pacu can eat squash.
But on a more important note, are you prepared to get a tank that's at least 8' x 3' x 2'? (that's over 350 gallons) Because that's what you're going to need to properly house that one pacu. And even then, they do MUCH better in groups so you'd be looking at needing closer to 1000 gallons to house 3 of them if you want it to be really happy.
Pacu are not fish that should be kept by 99.9% of private aquarium owners.
